| If you've never tried fesenjan or ghormeh sabzi, you'll want to after reading Jason Rezaian's moving — and mouth-watering — column on Iranian cuisine in the United States. Rezaian's columns often focus on human rights in Iran or the crisis of state hostage-taking. But he is also a great resource on food. Ahead of Nowruz (Persian New Year) this weekend, he writes about "the rise of Iranian food in the cultural consciousness" — and why it gives him hope. "With stews and braises cooked slow and low, the interplay between sweet and sour, pickling on a grand scale, and the liberal use of herbs and spices, Iranian food is delicious, complex and satisfying," Rezaian writes. "And what we eat is becoming comfort food for non-Iranians, too. For Iranian Americans, it couldn't happen at a more pivotal moment." Spotlighting several eateries he calls "wonderful embassies for Iran's culture and cuisine," Rezaian explains how food plays an important role for immigrant communities. Meals are "a way to connect with others while preserving history and creating new memories." Amid ongoing tensions between the United States and Iran, Rezaian is encouraged by the Iranian chefs and restaurateurs sharing their stories through food — and hopes that Iranian Americans find more opportunities to highlight their roots and history.
